While the classic Kanda Batata Poha is a breakfast superstar, organic rice flakes (poha) are incredibly versatile! Because they are pre-parboiled and flattened, they cook in minutes and easily absorb whatever flavors you throw at them.

Think of this as a lighter, quicker alternative to oatmeal. By swapping oats for rice flakes, you get a naturally sweet, dairy-free breakfast bowl that comes together in under 5 minutes without even turning on the stove!

  • ½ cup organic thin or medium poha (rice flakes)
  • ¾ cup warm coconut milk (or almond milk)
  • 1 tbsp jaggery powder or maple syrup
  • ½ tsp cardamom powder
  • Toppings: Sliced bananas, fresh pomegranate seeds, chopped almonds, and a sprinkle of chia seeds.
  1. Rinse: Place the poha in a mesh strainer and rinse very quickly under cold water just to soften it. Shake off excess water.
  2. Mix: Transfer the softened poha to your serving bowl. Pour the warm coconut milk over the top.
  3. Sweeten: Stir in the jaggery powder and cardamom. Let it sit for 2 minutes so the rice flakes can absorb the sweet milk.
  4. Top & Serve: Add your sliced bananas, pomegranate seeds, and nuts. Enjoy immediately for a comforting, gut-friendly breakfast!

  • 1 cup organic thick poha (rinsed and softened for 5 mins)
  • 2 medium organic potatoes, boiled and mashed
  • ½ cup finely grated carrots and finely chopped bell peppers
  • ¼ cup roasted peanuts, crushed
  • 1 tsp ginger-garlic paste
  • 1 tsp garam masala
  • 1 tsp chaat masala
  • Salt to taste
  • 1 tbsp olive oil (for brushing)
  1. Mash & Mix: In a large mixing bowl, combine the softened poha (mash it slightly with your hands), boiled potatoes, and grated veggies.
  2. Spice it up: Add the crushed peanuts, ginger-garlic paste, garam masala, chaat masala, and salt. Mix everything until it forms a dough-like consistency.
  3. Shape: Take small portions of the mixture and shape them into round, flat patties (cutlets).
  4. Bake: Preheat your oven to 400°F (200°C) or set your air-fryer. Place the cutlets on a parchment-lined baking sheet. Brush both sides lightly with olive oil.
  5. Cook: Bake for 18-20 minutes, flipping halfway through, until both sides are golden brown and crispy. Serve hot with a side of mint-coriander chutney!

Store-bought trail mixes are often loaded with refined sugar and unhealthy oils. This savory roasted poha mix (a healthier take on traditional Chivda) uses just a fraction of the oil and is packed with protein-rich nuts and seeds. It is the perfect 4 PM crunchy snack.

Prep time: 5 mins | Cook time: 10 mins | Serves: Makes about 3 cups

  • 2 cups organic thin poha
  • 1 tbsp coconut oil
  • ⅓ cup raw peanuts
  • ¼ cup raw cashews and almonds (mixed)
  • 2 tbsp pumpkin seeds
  • 1 tsp mustard seeds
  • 10 fresh curry leaves
  • ½ tsp turmeric powder
  • Pinch of hing (asafoetida)
  • Salt and a pinch of sugar to taste
  1. Season: Add salt and a tiny pinch of sugar. Toss everything together gently until the poha takes on a beautiful yellow hue. Let it cool completely before storing it in an airtight jar.
  2. Dry Roast the Poha: Heat a large, wide pan over low heat. Add the dry, thin poha and gently roast it for 4-5 minutes, stirring continuously until the flakes crisp up and slightly curl. Transfer to a large bowl.
  3. Roast the Nuts: In the same pan, heat the coconut oil. Add the peanuts, cashews, and almonds. Roast on low-medium heat until golden and crunchy. Add the pumpkin seeds in the last minute.
  4. Temper: Move the nuts to one side of the pan. Add the mustard seeds to the oil and let them pop. Add the curry leaves, turmeric, and hing.
  5. Combine: Turn off the heat. Pour this spiced nut mixture over your dry-roasted poha.
