Ingredients:
½ cup Ragi (finger millet) flour
½ cup rice flour (makes it crispy)
¼ cup rava (semolina)
1 green chili, finely chopped
1 small onion, finely chopped
1 tsp cumin seeds
Salt to taste
2 ½ cups water (adjust as needed for a watery consistency)
Oil or ghee for cooking
Instructions:
Mix the batter: Whisk the ragi flour, rice flour, rava, and salt in a large bowl. Add the water slowly, whisking continuously to avoid lumps. The batter should be thin and watery, like buttermilk.
Flavor it: Stir in the chopped onions, green chilies, and cumin seeds. Let the batter rest for 10 minutes.
Pour, don’t spread: Heat a non-stick tawa (griddle) until hot. Instead of spreading the batter with a ladle, pour it from the outside edges moving inward to fill the gaps.

Combine: Add the cooked, cooled millet to the pan. Pour the lemon juice over the top, add salt, and toss gently until the millet is evenly coated in the bright yellow tempering.
3. Evening Snack: Toss a Fresh Pearl Millet Salad
Instead of reaching for processed snacks, use cooked whole millets as a base for a hearty, refreshing salad. Pearl millet (Bajra) is rich in iron and has a wonderful chewy texture that holds up well against crunchy vegetables.

1 cup cooked Pearl millet (Bajra) – boiled until tender but chewy
1 cup mixed chopped veggies (cucumber, cherry tomatoes, bell peppers)
¼ cup red onion, finely diced
2 tbsp fresh mint and cilantro, chopped
Dressing: 1 tbsp olive oil, 1 tbsp lemon juice, ½ tsp roasted cumin powder, salt, and pepper.
Instructions:
Prep the base: Ensure your cooked bajra is completely cooled so it doesn’t wilt the vegetables.
Toss: In a large mixing bowl, combine the cooked millet, chopped vegetables, onions, and fresh herbs.
Dress: Whisk the olive oil, lemon juice, cumin, salt, and pepper in a small bowl.
Serve: Pour the dressing over the salad and toss well. Let it sit for 10 minutes in the fridge for the flavors to meld before serving.
4. Dessert: Make a Healthier Sweet with Foxtail Millet Kheer

Roast: Heat the ghee in a heavy-bottomed pan. Fry the nuts and raisins until golden, remove, and set aside. In the same ghee, lightly toast the washed foxtail millet for 2 minutes until fragrant.
Simmer: Pour in the milk and bring to a gentle boil. Reduce the heat to low and let it simmer for 15-20 minutes, stirring occasionally so it doesn’t stick to the bottom.
Thicken: Once the millet is soft and the milk has thickened to a creamy consistency, turn off the heat. Let it cool for just a minute.
